Preparation

Prepare the cheesecake base: in a blender, mix cookies until you get an end mixture, add butter and mix until you get a homogeneous mix. Pour the cheesecake base into the hinge mould and overwrite until you get a compact base. Put the time to prepare the cheesecake.
Prepare the cheesecake: Preheat the oven at 180°C and chemiser the bottom of a hinge mould (20 cm) of butter and cooking paper. In a large bowl, mix fresh cheese, fresh cream and sugar. Add eggs and yellow one to one then add lemon juice.
Surround two sheets of aluminium paper with the outer edges of the mould so that the water does not penetrate the mould. Put the mold in a deep dish.
Pour the cheesecake into the mould and cover it slightly with aluminium paper. Pour water to create a Marie Bath: the water must arrive in the middle of the mould stuff for about 1 HOURS OR EVEN 1 h15 depending on your oven. Withdraw from the bath Marie and let rest all night.
Prepare the cake: Preheat the oven at 180°C. Grease the bottom of a 20 cm Hinge Mould. In a pan, melt the butter and sugar until the sugar melts and then pour into the bottom of the mould. Have pineapple and cherry washers on a regular basis. Put aside.
Prepare the cake base. In a large bowl, mix sugar and butter. Add eggs one to one, then flour, chemical yeast, vanilla and salt. Mix and add milk to get a smoother paste. Pour the preparation into the mould with the pineapple and stuff for 25-30 minutes. To check the cooking, plant a knife, if there's nothing on it, it's cooked.

Montage of the cheesecake: while the cake cooked, get the cheesecake out of the fridge and the it with a flat-End Knife. Remove the mold gently and put the cheesecake in a service plate.
Let the cake cool once out of the oven. Remove The Hinge Mold but leave the cake spilled on the bottom of the mould. Use a rag to return the spilled cake on the cheesecake. Gently take off the bottom of the cake mold. Warm the caramel and pour it on the cheesecake. Serve with some cherries.
